Keto Corned Beef and Cauliflower Hash

Ingredients:


1.5 lbs (680g) corned beef, cooked and diced

4 cups cauliflower florets

1 small onion, diced

2 cloves garlic, minced

2 tablespoons butter or ghee

Salt and pepper to taste

Optional: 1/2 teaspoon paprika for added flavor

Optional toppings: Chopped fresh parsley or green onions

Instructions:


Steam the cauliflower florets until they are tender but still slightly firm. Drain any excess water and set aside.

Heat the butter or ghee in a large skillet over medium heat.

Add the diced onion and minced garlic to the skillet and sauté until they become fragrant and slightly translucent.

Add the diced corned beef to the skillet and cook for about 5 minutes, stirring occasionally.

Add the steamed cauliflower florets to the skillet and mix well with the corned beef.

Season with salt, pepper, and paprika (if using). Stir everything together.

Continue to cook the mixture for another 5-7 minutes, stirring occasionally, until the cauliflower is fully cooked and slightly browned.

Taste and adjust the seasoning if needed.

Once the cauliflower is cooked to your liking, remove the skillet from the heat.

Serve the keto corned beef and cauliflower hash hot and garnish with chopped fresh parsley or green onions if desired.
